It’s summer, it’s (almost) time for holidays and it’s most definitely time to plan the menus for your summer of entertainment.  Looking for some food and wine matching tips, or a little inspiration for the festivities? Allow us.

The Seafood Lunch

Fresh Tasmanian oysters, succulent sides of salmon and bowls of delicious king prawns. A seafood feast is the epitome of an Australian Summer Christmas. Our wine suggestions? BBQ Crayfish

Nothing says laid-back luxury than crayfish on the BBQ finished with butter sauce of your choice.  Our Clover Hill Cuvée Prestige Late Disgorged, with its complex structure and flavours of fresh lemon curd and brioche, is the perfect accompaniment.

Classic Roast Turkey

If there is no roast Turkey, is it really even Christmas? Something sweet to finish? We love to pair the beautifully balanced Tasmanian Cuvée Rosé NV with a rich dessert such as plum pudding. The sweetness of the rose will complement the dessert beautifully, whilst the acidity of the wine will cleanse the palate and cut through the richness of the pudding.
