Baked apple and citrus fruit with hints of sea spray, shortbread, shiitake broth, freshly baked pastries, crushed stone, pressed white flowers, clotted cream and ozone. Rich and mouth-filling on the palate with a swell of spiced apple and fresh brioche stretched on a frame of vivid, minerally acidity. Trails off long, pure, dry and creamy." - Dave Brookes
