Since 1986 we have been redefining Tasmanian sparkling wine, creating wines exclusively using methode traditionelle. Today, we’re focused on a multi-vintage philosophy, delivering a consistent house style built on freshness, character, and vibrancy.

Our multi-vintage approach redefines consistency and vibrancy.

Since 2019, chief winemaker Robert Heywood has experimented with different formats, pressure levels, and reserve blends, resulting in a perfectly balanced wine. We age select reserve wines in various vessels, blending them with chardonnay-dominant vintage base wines before secondary fermentation. This creates a more consistent house style at an accessible price point, pushing the boundaries beyond Champagne traditions.

Cool-Climate Wines

Since 1986, we've been crafting premium sparkling wines, nestled in the cool-climate region of Pipers River, Tasmania.

Our vineyard’s unique combination of ancient volcanic soils and a sheltered maritime climate allows us to grow traditional sparkling varieties—Chardonnay, Pinot Noir, and Pinot Meunier.

CLOVER’S KITCHEN

Our cellar door offers a unique, luxurious, wine destination benchmark in Tasmania with a small plate menu of simple but striking regional produce to perfectly complement our wines. Chef Tanya White explained:

“Our passionate philosophy is to create interesting and unique flavour combinations of sweetness, umami, and acidity. Our core ethos is to enhance and support the amazing sparkling wines produced by our winemaking team.”
