Clover Hill Noir en Bois is a unique product designed to show the relationship between classic sparkling varieties and the influence of oak and time on lees.

With the higher pinot proportion combined with time on light fermentation lees and oak provides a wine with greater palate weight and complexity, whilst the natural acid drives the length of the palate.

This wine displays brioche and strawberry upfront, combining with the creamy, textural mid palate and natural crisp acidity to leave a morish palate.

Nior en Bois is a pinot dominant blend that has been aged on light fermentation lees in small format oak for a period of 16 months.  The selected cuvees of this blend were chosen to show the potential of the wine and how it develops in oak.  Aged on lees for 27 months this wine shows precision and complexity that you would expect form a wine of this caliber.

60% Pinot Noir, 22% Chardonnay, 18% Pinot Meunier
